Recently we have witnessed the revival of the fifth quarter by chefs from the high-sounding names, in the name of the crisis and beyond. Perhaps not part of the animals considered at first and then we will not fall in the menus offered by those chef and you will agree with us that we can not even consider it as a raw material of choice. Serves 6

1,200 kg of pork rind (one piece)

600 g potatoes 500 g tomato puree 150 g of tomato concentrate


1 onion 1 carrot 1

celery 1 sprig of basil
1 / 2 teaspoon fennel seeds
1 / 2 cup of olive oil salt

Preparation

Blanch for 2 minutes and the rind with a knife raschiatela to deprive of any hair. Dry it well and roll it on itself (if the roll should not be too long to go flat in the pan, divide it into two parts); tie tightly with kitchen white thread and keep it on hold. Finely chop the onion, celery and carrot, put into a large saucepan with oil and let them dry gently over medium heat.
Join the concentrate diluted with a pint of hot water, add the tomato sauce, basil, salt, pepper and boil the water before diving into the roll of pork rind. Reduce heat, cover the pot and cook for 30 minutes. Then add the peeled potatoes, washed and cut into small pieces.
Stir, add a ladle of water if needed and continue cooking for another 40 minutes. When cooked, pour into a serving dish and serve concave.
With the juice of the rind can flavor the boiled rice or noodles if you prefer sprinkling of ricotta salata or grated cheese.
