Sicilian Recipe: Raw hides rolled
Recently we have witnessed the revival of the fifth quarter by chefs from the high-sounding names, in the name of the crisis and beyond. Perhaps not part of the animals considered at first and then we will not fall in the menus offered by those chef and you will agree with us that we can not even consider it as a raw material of choice. This does not mean, however, are less good or unwrapped. What are we talking about?

rinds or pork rinds, are nothing if not the skin of the pig. In the kitchen are used in various ways starting from the farm kitchen than once (for which the pig did not throw anything away) to the famous beans with pork rind and the legendary casseoula. Maybe it is not particularly flat "noble", but tasty and traditional event for sure. In addition to use as an ingredient, pork rinds are in fact used for the preparation of meats how to cook the sausage, which they named.

Serves 6
1,200 kg of pork rind (one piece)
600 g potatoes 500 g tomato puree 150 g of tomato concentrate
1 onion 1 carrot 1
celery 1 sprig of basil
1 / 2 teaspoon fennel seeds
1 / 2 cup of olive oil salt
pepper
Preparation
Blanch for 2 minutes and the rind with a knife raschiatela to deprive of any hair. Dry it well and roll it on itself (if the roll should not be too long to go flat in the pan, divide it into two parts); tie tightly with kitchen white thread and keep it on hold. Finely chop the onion, celery and carrot, put into a large saucepan with oil and let them dry gently over medium heat.
Join the concentrate diluted with a pint of hot water, add the tomato sauce, basil, salt, pepper and boil the water before diving into the roll of pork rind. Reduce heat, cover the pot and cook for 30 minutes. Then add the peeled potatoes, washed and cut into small pieces.
Stir, add a ladle of water if needed and continue cooking for another 40 minutes. When cooked, pour into a serving dish and serve concave.
With the juice of the rind can flavor the boiled rice or noodles if you prefer sprinkling of ricotta salata or grated cheese.

The taste of sea urchins like many but not all: sharp and colorful, bring fresh water directly into our flat. Sea urchins, that maybe some of us know because of the spines, are used raw as an appetizer or a classic sauce for spaghetti. So here for you also our recipe for the spaghetti with sea urchins.
Serves 6
600 g spaghetti
6 dozen urchins
1 clove garlic 1 small bunch of parsley
50 grams of olive oil salt
chili
Preparation
Cut urchins and collect the eggs in a bowl. In a saute pan on the stove with garlic oil, half the chopped parsley and pepper. In a large pot with salted water cook the noodles, drain it al dente. Pour into the pan of fried incorporating urchins. Pepper and stir well to amalgamate. Transfer the spaghetti in a serving dish and sprinkle with parsley before serving.

Recipe: Sweet and Sour Cod

1 apple grated peel of one lemon 6
prunes 1 cup dry white wine
1 / 2 cup of vinegar White
Preparation
Place Heat a saucepan with a dl of olive oil, chopped onion and garlic, brown them and add the chopped parsley, wine and vinegar. Let it evaporate and add the peeled tomatoes and cut in half by private threads. Stir and cook for 10 minutes, then add the lemon zest, apple, peeled and sliced, pitted plums in a small fillet, raisins and pine nuts, a glass of hot water, hot pepper, salt and pepper. Mix everything well and cook for 15 minutes more.
Thoroughly wash the salt cod, cut into pieces, dry it in a dish cloth and sprinkle flour on each side.

Happy Valentine's Day to all!
Like it or not celebrate this "sugar" anniversary, we take it as an excuse to make something chocolate. If you do not have time and You want a taste of Sicily, try these sticks or orange peels in chocolate if you prefer. Very easy and delicious, smooth out even the most hardened single :-)
Makes about 30 pieces
125 g good dark chocolate
100 g candied orange sticks
also serves as an acetate sheet or paper oven
Preparation
Melt the chocolate in the microwave or in a water bath. Dip a stick at a time into chocolate, covering all or only part inn according to your taste, let it drain and put it on the acetate sheet or on parchment paper. Let cool.

Sicilian Recipe: Lobster Sicilian wines

We should not choose too large animal, possibly under 2 kg, and if possible are preferred females. If you like to experiment, we leave you a very simple recipe.
Serves 6
3 lobsters from 600-700 gr each
1 biccchiere oil
1 glass of wine

Place one at a time already boiled crawfish on the work surface, with the belly pressatele against the cutting board, hold it firmly with your left hand and with a large knife sharp cut first legs and antennae, then the bust split in half lengthwise and tails to trunks. arrived at Memphis, a lovely City of Wine in the province of Agrigento, on the border with the province of Trapani (It is only 18 km from Castelvetrano, where I live and work) , take the SP 41 in the direction of Sambuca di Sicilia. After just a few kilometers, some signs remind me that I'm already taking the "Wine Road Sicane Terre", one of the most evocative of our Viaticum enografici Trinacria. After about 10 km I take the SS 624, better known as the "Palermo-Sciacca" or "valley road" and continue towards Sciacca. At Km 74 I find the words "Farm" and turn right. I find myself along a tortuous and difficult road that, initially rising, it gives me, going down, a breathtaking panorama of sea and rural landscape at the same time. The enormous wooden door which is the massive entry of a notice indicating that the business is closed and will reopen to the public after April 1, 2011. Around me landscape nothing short of fabulous. Tenuta S. Baglio Vincent faces a huge and beautiful valley (shown on maps as St. Vincent Vallone), dominated by the ruins of a military fort still intact, built on the rock and dating from the First World War. We are in an area full of charm, history and culture, and historical reminiscences remarkable and significant (often unnoticed and ignored by the residents of the area).

Sicilian Recipe: Grilled with olive

Sicilian Recipe: Tuna fired
If you fancy a light meal and easy to prepare, you can try this recipe for tuna in the oven. Just add the classic Mediterranean flavors, such as capers and olives, to discover that all we can cook fish. Even if not a master chef ;-)
Serves 6
6 slices of tuna breadcrumbs
tomatoes
capers green olives oil
Preparation
Cut 6 slices of tuna not very thick and arrange on bottom of a well-oiled baking pan. Cover the slices with a layer of breadcrumbs and garnish with chunks of tomatoes, capers and green olives pitted and chopped. Add salt, moisten with a little oil and bake. After 35/40 minutes of cooking to moderately hot oven (170 ° C) the tuna is ready.

Sicilian Recipe: Artichoke salad and cheese recipe Sicilian

100 g chips 100 grams of parmesan cheese fresh

Peel artichokes depriving them of the stem and the hard outer leaves, remove the tips even with plugs and thinly slice them by putting them as they are ready to soak in water acidulated with half the lemon juice. Meanwhile reduce the cheese and hearts of celery into thin strips and transfer them into a large bowl, add the onions, parmesan cheese and the drained artichokes well acidulated water. Combine in a bowl oil, remaining lemon juice, oregano, salt and pepper and beat with a fork until a well-emulsified sauce. Sull'insalata pour, mix again and serve.
